I love using avocado as a sub for mayo and adding in some hard cooked eggs to that mix just amps up the satiety factor in this Protein Packed Tuna Avocado Salad.
I’ve been kicking around the idea of using less grains in my cooking. During the summer months, steaming up a pot of rice seems tedious, not to mention heats the house up unnecessarily, so whipping up a cold salad featuring some quality protein sources has been popular for us as of late.
I haven’t cut grains out entirely, as I still adore my quinoa, but I do like balance so some nights, I eat a little lighter and this salad is perfect for that.
Speaking of balance, here’s a funny story. It may surprise you to know I’m a huge mixed martial arts fan. What’s MMA? You’ve probably seen it on TV and turned away in horror after seeing one man knock another man stiff with a shin to the face. Well, for some unexplainable reason, I love it. I have since the 90’s when these competitions were only available on VHS tapes. Member those? Lol. 🙂
Anyway, a lot of folks find it offensive and are pretty shocked to learn I’m a avid follower of the sport. This past weekend there was a massive event with two titles on the line and the entire card had was unbelievable. Joe and I were pumped for the night and we had such a fun time cheering on our favourites and trash talking the villains.
The balance part of this story comes the next day when we went out for a walk. There’s a lovely bike path close to our house that offers a quiet stretch with no cars or traffic and we’ve been strolling it for years. About half way into our route there is a long patch of grass that every so often has messages carved into it by a lawnmower. There is a family that lives off of the path (we assume) and the dad has been known to write applicable little bulletins. For instance a few years back it was CANUCKS OR BRUINS? during the Stanley Cup finals. Labour Day Monday we’ve seen LONG WEEKEND! carved with precision into the grass. This Sunday we came across a new message. It read: MOM 1922-2015.
Immediately my eyes misted up and that tough, savage girl was gone and a soft pillow of a teddy bear remained. I felt such empathy for this family, losing their matriarch. I also felt reassured that she was so loved and would obviously live on in their hearts, not just in the grass.
So there you have it. Balance, Sharon style. 😉 Sometimes mayo, sometimes avocado. Sometimes fights, other times sentimental walks.

- 1 can tuna, drained
- 1 avocado, chopped into small pieces
- 1 lime, juiced
- 1 hard cooked egg, chopped into pieces
- 1 tbsp. diced shallot (or onion)
- 1 stalk celery, thinly sliced on the diagonal
- 1/4 cup fresh chopped parsley
- 1/2 tbsp. mustard
- sea salt & pepper, to taste
- In a medium sized mixing bowl add the avocado and lime juice. Stir well. This helps to keep the avocado from browning.
- Add the remaining ingredients and stir well again
- Serve over greens, or as a sandwich
