Who doesn’t love pizza? The cheese, the tomato sauce, a crispy crust … all good, right? Well, what if you could throw together your own pizza faster than delivery? A pizza using fresh ingredients, hot and ready to enjoy in fifteen minutes. I did just that on the weekend and I can see this quick, easy dinner becoming a favourite in our rotation.
I used a ten inch gluten free tortilla as my pizza crust and it worked like a charm. It totally held up in my hands and crisped up nicely.
Now for the sauce. There is an abundance of fresh tomatoes being jarred up right now with the season peaking. The tomato sauce I used was a gift from a friend of mine who just so happens to be an Italian chef.

According to Chef Marco, the key to a good pizza is not to overdo it on the sauce. Nothing is worse than a soggy pizza, so use a light hand when ladling on the pomodoro. You also want to use fresh mozzarella. The best quality available to you. It takes your pizza from homemade to Pizzeria in one fell swoop.

It bubbled up perfectly with a few crispy brown spots on the cheese. Time for the fresh basil. Tear it up and sprinkle it around. Use as much as you like. Personally, I can never get enough fresh basil. So clean and distinctive. It is the perfect match for the creamy cheese.
Slice your pizza into four and pair it up with a nice salad and a bit of chianti perhaps?

- Heat broiler to high
- Line a baking sheet with parchment paper and place your tortilla on top
- Evenly spread the sauce out on the tortilla, being sure to get as close to the edge as possible
- Place the cheese around the tortilla
- Set under the broiler for 3-5 minutes, or until the cheese is bubbly and brown in spots
- Top with fresh torn basil leaves
