Ingredients for this recipe:

No pizza dough is needed as we are using zucchini as the crust.

These mini zucchini pizzas are very customizable. Do half the batch vegetarian and the other half with some pepperoni slices. Use whatever toppings you desire! For the base recipe I use:

  • zucchini – choose a smaller zucchini if you can. They cook more uniformly and they add to the whole “mini” effect.
  • olive oil
  • tomato sauce
  • mozzarella cheese – the BEST for melting

How to make Zucchini Pizza 

There is very little prep time needed for this dish and the instructions are easy.

First, slice the zucchini and place it on a parchment-lined baking sheet. Then drizzle them with olive oil and lightly brush each side.

Next, pop the zucchini rounds into the oven to roast.

Meanwhile, prep your toppings – grate the cheese, and slice up any protein or veggies.

Finally, add on the toppings and return to the oven to broil. This only takes a minute or two until the cheese starts to bubble.

It’s a delicious and filling healthy meal. Zucchini has a high fiber count yet low calories. It is also really quick to make – with under thirty minutes total time. Win-win.

The Best Zucchini Pizza Bites with Simple Ingredients

Ingredients
  

  • 2 small zucchini
  • 1 tbsp olive oil
  • ¼ cup tomato sauce
  • ¼ cup freshly shredded mozzarella cheese
  • 3 tbsp freshly sliced basil

Instructions
 

  • Heat the oven to 450.
  • Wash the zucchini and slice off the stem and the bottom and discard. Slice the rest in 1/4 inch thick rounds. Try to keep them all the same size so they all cook evenly, at the same time.
  • Line a baking sheet with parchment paper and transfer the zucchini slices onto it. Lightly brush each slice with olive oil, season with a little salt and pepper, flip them over and brush and season the other side also.
  • Place the baking sheet in the oven for 10 minutes, flipping the zucchini rounds at the halfway point.
  • Remove the baking sheet from the oven and set it to broil. Meanwhile, spoon tomato sauce onto each of the zucchini slices and sprinkle each piece with the grated mozzarella cheese. Add the additional toppings if using.
  • Place the baking sheet under the broiler for 2-4 minutes, until the cheese is melted and beginning to brown.
  • Remove from the oven and top with freshly chopped basil. Serve warm.
