Chocolate Coconut Macaroons
This easy, no bake recipe for how to make Chocolate Macaroons will become a favorite. It is super fudgy and packed with coconut. The perfect simple recipe for beginners and a healthy take on the classic. Vegan and gluten free!
Even through the winter I still love no bake recipes. This healthy spin on Chocolate Macaroons is no exception.
This recipe can be ready in thirty minutes and these sweet treats disappear almost as quickly, as they are gobbled up by grateful friends and family.
CHOCOLATE MACAROONS
This recipe was adapted from my late mom’s cookbook. It was tucked away loosely on a separate piece of paper and was written by a woman named Margaret. She worked in our home, helping with things like cooking and cleaning when my Mom became too sick to take care of the massive operation that was our household of six.
My Mom really liked Margaret and so did I. She has spiky white-blond hair, chubby cheeks, and a big, fun personality. She liked to cook and I think my Mom absolutely loved having someone else cook for her for a change. Margaret’s dishes were all so different from my Mom’s usual rotation and she would always ask Margaret to write down the ones she especially liked.
This was one of them. It was called Chocolate Rocks. They are fudgy, laced with coconut, and full of the goodness of oats.
INGREDIENTS FOR CHOCOLATE MACAROONS
It’s a pretty short but sweet list of ingredients to make these lovely coconutty treats.
- oats (use gluten free if needed)
- cocoa or cacao powder
- unsweetened shredded coconut
- coconut oil
- milk of choice
- vanilla
- coconut sugar
Margaret’s version wasn’t made with coconut sugar or coconut oil and it didn’t specify whether or not the oats were gluten free but the idea remains the same. Simple, easy, and really good. Really, really good. 🙂
When I say easy, I mean, can you stir? 😉
Melt together your coconut oil (non-vegans can use organic butter) with the coconut sugar and your milk of choice then stir in the cocoa and oats.
Boom.
Macaroons.
I’m willing to bet these ‘chocolate rocks’ will be a hit at your home during the holidays like they are at mine (we’ve made this twice in the last couple of weeks).
I’ve even been using my homemade hemp milk to make them! Try it out. SO easy and a great alternative to dairy.

Chocolate Macaroons
Ingredients
- ¼ cup coconut oil *or butter
- ¾ cup coconut sugar
- ¼ cup milk of choice
- ¼ cup cocoa powder
- ¼ tsp vanilla
- ½ cup shredded unsweetened coconut
- 1 ½ cups oats *gluten-free if required
Instructions
- In a medium sauce pan melt together coconut oil, sugar, and milk over medium low heat until blended well
- Remove from heat and stir in cocoa powder. Mix well.
- Stir in vanilla and then the oats and coconut, and mix well again.
- On a parchment lined baking sheet, using a small disher, scoop out heaping tablespoon sized macaroons. Refrigerate for 30 minutes to set.
- Store in the fridge in a sealed container for up to a week.
I believe you’ve left out the shredded coconut in your instructions.
