Ingredients

  • almonds – raw 
  • maple syrup – adds that sweet maple flavor
  • coconut sugar – any granulated sugar will work
  • cinnamon
  • salt

We like to use coconut sugar as a swap for white or brown sugar. This toasty-flavored, natural sweetener is low in the glycemic index and has less sucrose than refined white sugar.

This recipe is gluten-free and has no eggs or egg white so it is a vegan-friendly recipe also.

Instructions for this recipe

First, preheat the oven and line a cookie sheet with parchment paper.

Place the almonds in a bowl.

Meanwhile, warm the maple syrup in a small saucepan.

Then, pour the warmed syrup over the almonds and stir to coat them.

Next, make the cinnamon sugar mixture by combining the cinnamon, coconut sugar, and salt in a little bowl.

You can use a fork or a little whisk to do this.

Sprinkle the cinnamon sugar onto the almonds and stir again.

Give them a good stir so that that each almond has been coated.

Finally, spread them out on the parchment lined sheet into a single layer.

Give them a bit of space as this helps them to roast better. Don’t overcrowd the baking sheet.

When the cinnamon coated almonds come out of the oven they are deep brown in colour, almost caramelized.

Let them cool to room temperature before eating for maximum crunchiness.

  • Preheat oven to 375. Line a baking sheet with parchment paper and set aside. Measure out the almonds and pour them into a bowl.
  • In a small saucepan over low heat, warm the maple syrup. Coat almonds with heated maple syrup, stirring well.
  • Mix the coconut sugar, cinnamon, and salt together. Sprinkle over the almonds and mix with a spoon, coating well.
  • Pour the coated almonds onto the parchment lined sheet and spread evenly into a single layer.
  • Pop into the preheated oven and roast for 10 minutes.
  • Remove from oven, loosen almonds from the parchment and stir around.
  • Let them sit for 10 minutes to come to room temperature.
