Why we love this recipe
These walnuts have a nice balance of spices and a hint of sweetness. The blend of seasonings isn’t overpowering and you will find yourself helping yourself to a second handful!
This is a super easy recipe! Just stir and roast. Done.
Added bonus: these walnuts are also naturally vegan and gluten-free.
Ingredients
- walnuts – walnuts have a rich and buttery texture that goes so well with this spice blend. You could also use pecans, almonds, cashews, or a mix of all of them.
- olive oil – coconut oil and avocado oil can be used as substitutes.
- dried onion flakes – dried rosemary is a great substitute.
- granulated garlic
- granulated onion
- sugar – we mostly use coconut sugar but sometimes substitute maple syrup which is also super good.
- salt – fine sea salt or kosher salt will both work fine.
- cayenne pepper – this is optional but brings a bit of heat.
Equipment
- mixing bowl
- spoon
- baking sheet
How to make spiced walnuts
Step 1
First, preheat the oven and line a baking sheet with parchment paper.
Step 2
Then, pour the walnuts into a large mixing bowl.
Next, cover the walnuts with olive oil and stir well to coat all the little crevices you can.
Step 3
Meanwhile, mix all of the spices together, and then sprinkle the spice mixture over the olive oil-coated walnuts.
Stir it all together well. Tossing to completely coat the nuts with all the savory goodness.
Step 4
Then, transfer the seasoned nuts to a rimmed baking sheet lined with parchment paper in a single layer and pop them in the oven to bake.
Step 5
Remove the pan from the oven and let the spiced walnuts cool completely on the baking sheet.
They will continue to crisp up as they cool down, so be patient and wait for them to completely cool.
Expert tips
- Be sure to spread the walnuts in an even layer on the baking sheet. This prevents them from becoming overcrowded and allows for uniform roasting.
- Remember that different oven temperatures can vary, so it’s essential to keep a close eye on the walnuts during the roasting process to prevent burning.
Recipe variations
- Spin this recipe into curry spiced walnuts by adding curry powder, ginger, turmeric, and cumin.
- Make a sweeter version by eliminating the onion and garlic and using maple syrup, nutmeg, vanilla, and cinnamon instead.
Serving suggestions
- As a snack, out of a little bowl.
- Add them to your salads! Nuts add wonderful crunch and texture as well as healthy fats that keep you satiated (full). We love them on this Arugula Salad.
- On a charcuterie or fruit and cheese board! The flavor of this savory roasted nuts recipe would complement a platter of sweet fruit and mild cheese.
- Give as gifts! Put them in a little jar and wrap them with a ribbon or a bow.
FAQS
Keep a close eye on the nuts while they are in the oven. Stir them occasionally to prevent any hot spots. Additionally, you can lower the oven temperature slightly or reduce the roasting time if you find that the spices are browning too quickly.
We recommend letting the walnuts cool completely for the best-tasting results. This allows the walnuts to become crisp and enhances the flavors. Typically takes around 15-20 minutes for the roasted walnuts to cool down.
Storage
It is important to remember that nuts lose their crunch when exposed to air so store these walnuts in a sealed Ziploc bag or airtight container for them to maintain their crispness and texture.
When properly stored, these walnuts will last for up to 2 weeks at room temperature or up to a month stored in the refrigerator.
