- pasta – I’m a fan of brown rice spaghetti for this recipe
- a whole lemon – for lemon juice and for lemon zest
- olive oil
- goat cheese
- greens – arugula or spinach
- salt and pepper – I’ve been into Pink Himalayan Salt lately
How to Make this Goat Cheese Pasta Recipe:
I love how simple this lemon goat cheese pasta dish is!
First, get the pasta started by following the package instructions. There are a lot of different types of pasta and all have varying cooking times. Always boil the water in a large pot and sprinkle in a good bit of salt.
Next, while the noodles are cooking prepare the goat cheese pasta sauce.
In a large bowl stir together the olive oil with the fresh lemon juice and a sprinkling of salt and pepper. Then add in your goat cheese and stir again.
Finally, add the greens.
Thin the sauce with 2-3 tablespoons of boiling pasta water and stir until it is creamy. The hot water will wilt the greens to the perfect texture for eating.
Drain the cooked pasta ( I prefer mine al dente), pour it over the sauce, and give it all a good toss. Split it between two bowls and garnish with lemon zest for added flavor.
Serving Suggestions and Substitutions for Goat Cheese Pasta:
- Top with parmesan cheese and red pepper flakes
- Add chopped herbs like fresh basil or parsley to taste
- Toss in cherry tomatoes or grape tomatoes
- Substitute the greens for cooked veggies like peas, or asparagus
- Saute onions and garlic and add to the sauce
- Add protein like grilled chicken or shrimp

Creamy Goat Cheese Pasta – Ready in Under 20 Minutes!
Ingredients
- ⅓ package of brown rice spaghetti – or enough pasta for 2 people
- ½ lemon zested and juiced
- 3 tbsp olive oil
- ¼ cup goat cheese
- 2-3 cups greens – either spinach or arugula
- sea salt & pepper to taste
Instructions
- Cook pasta to package instructions.
- Meanwhile, in a large bowl, stir together the oil, lemon juice, sprinkle of sea salt, and lots of fresh pepper. Add in the goat cheese, stir then add in the greens.
- Spoon 2-3 tablespoons of the hot pasta water over the greens and stir again.
- Pour the cooked and drained spaghetti in the same bowl as the dressing and arugula and toss well.
- Portion into 2 bowls.
- Garnish each with lemon zest and enjoy!
