Instructions

Step 1
Start by preheating the oven to 400 degrees and lining the baking sheet with parchment paper.
Step 2
Then, after draining the chickpeas with a colander, gently remove the thin outer skin from each chickpea and dispose of it.
We highly recommend peeling the skin off the chickpeas before roasting. This is an extra step, but the crispiness is unbeatable.
Expert Tip!
For easy peeling, spread the chickpeas out on a paper towel or kitchen towel and gently fold the towel over them. Then, gently roll or rub the chickpeas to loosen the skins, making them easier to peel off.
Step 3
Next, toss the peeled chickpeas with a tablespoon of olive oil and spread them evenly onto the prepared baking sheet.
Step 4
Then, pop the baking sheet in the preheated oven and roast for 40-50 minutes, giving them a shake and stirring every 10-15 minutes to prevent any burning.
Step 5
Meanwhile, while the chickpeas are roasting, stir up the spice blend.
Step 6
Finally, remove them from the oven and coat them with a bit more olive oil while they are still hot.
Then, sprinkle on the spice blend and stir well to distribute the seasonings.
Substitutions
- Instead of olive oil, use avocado oil or coconut oil.
- Substitute the chickpeas for edamame for a different plant-based protein.
Recipe Variations
- Make it a sweeter snack by swapping the spice blend for a mixture of cinnamon and coconut sugar.
- Create an Indian spice blend using curry powder, turmeric, black pepper, garam masala, and cumin.
- Combine poppy seeds, sesame seeds, dried minced garlic, dried minced onion, and a bit of sea salt for a flavorful and savory everything bagel seasoning.

FAQS
Yes! This recipe is a delicious snack for people with various dietary restrictions, including gluten-free, vegetarian, or vegan.
Yes, roasted chickpeas can be made ahead of time for a party. Store them in an airtight container until you’re ready to serve them. They can be served at room temperature or reheated briefly in the oven before serving to restore their crispiness.
Storage Tips
To Store: These chickpeas lose their crunch pretty quickly, so they are best enjoyed right away. However, you can store them in an airtight container or ziptop bag, ensuring that the air has been fully squeezed out to prevent any moisture. The moisture will make these soggy. You can also pop them back into the oven to crisp them up again if desired.
