  • Chickpeas – Also known as garbanzo beans.
  • Olive Oil
  • Seasonings – We use a blend of chili powder, cumin, coriander, smoked paprika, sea salt and cayenne pepper.

  • Baking Sheet – We use a large-rimmed baking pan.
  • Parchment Paper – A must for easy cleanup. We recommend using unbleached parchment paper.

Step 1

Start by preheating the oven to 400 degrees and lining the baking sheet with parchment paper.

Step 2 

Then, after draining the chickpeas with a colander, gently remove the thin outer skin from each chickpea and dispose of it.

We highly recommend peeling the skin off the chickpeas before roasting. This is an extra step, but the crispiness is unbeatable.

Expert Tip!

For easy peeling, spread the chickpeas out on a paper towel or kitchen towel and gently fold the towel over them. Then, gently roll or rub the chickpeas to loosen the skins, making them easier to peel off.

Step 3

Next, toss the peeled chickpeas with a tablespoon of olive oil and spread them evenly onto the prepared baking sheet.

Step 4

Then, pop the baking sheet in the preheated oven and roast for 40-50 minutes, giving them a shake and stirring every 10-15 minutes to prevent any burning.

Meanwhile, while the chickpeas are roasting, stir up the spice blend.

Finally, remove them from the oven and coat them with a bit more olive oil while they are still hot.

Then, sprinkle on the spice blend and stir well to distribute the seasonings.

Substitutions

  • Instead of olive oil, use avocado oil or coconut oil.
  • Substitute the chickpeas for edamame for a different plant-based protein.

Recipe Variations

  • Make it a sweeter snack by swapping the spice blend for a mixture of cinnamon and coconut sugar.

  • Next, spread them evenly onto the prepared baking sheet and toss them with one tablespoon of the olive oil. Then, pop the baking sheet into the oven.

  • Meanwhile, add the spices to a small bowl and stir them together.
  • Remove the tray from the oven and toss the chickpeas with one teaspoon of the olive oil. Then sprinkle on the spice blend and stir well to coat them.

    1. It’s funny because I included that shot of the blizzard-y conditions outside my window so people would feel sorry for me but instead I keep getting comments about how beautiful it is! Ha! The snow was a novelty for me when I first moved here from the west coast. Now, not so much, 😉

    1. Ha! Beautiful! Good one. 😉 If it wasn’t SO cold I might look at it as beautiful. I’ve tried a few times before and had a soggy result and I thought for sure an hour would be waaay too long, but it’s not. Take a bite from one or two of them and of they don’t crunch the whole way through pop them back in for 3 minutes and test again. Stay cool there, down under! 🙂

  4. I love crunchy snacks and I’ve actually never tried roasted chickpeas before. I think this is something I would love!! Definitely have to try this out, not only perfect for game day – but perfect for my extra long wintery drives home from work – I can just be munching away in the car! Ohh..I would need these today…lol! 😉
