Quinoa Stuffed Maple Sweet Potato

Stuffing a baked sweet potato with quinoa is something I’ve wanted to do for a long time. For some people its bungee jumping for others its stuffing root vegetable with healthy grains. Is it any wonder I was destined to become a food blogger? Anyway, this dream has finally been realised and it was all inspired by the Coconut ‘Bacon’ I made earlier this week. I had a feeling that the smokiness of the ‘bacon’ would pair amazingly well with sweet potato and a touch of maple syrup. And, since it’s been on the old bucket list, quinoa was added to the mix.

This is a nice, light meal that was incredibly easy to throw together. I popped a large-ish sweet potato in the oven to bake. Since it would take about an hour for the potato, I had time to cook up the quinoa, chop up a bit of cooked chicken (this is optional if you want to keep things veggie) and toss a salad. By the time I had done that, my potato was perfectly baked and I was off to the races.

I scooped the cooked potato out of the skin into a large bowl and added some maple syrup. Then I stirred in my cooked quinoa, chicken and the magical coconut bacon. If you’ve been on the fence about trying it out, this recipe idea should convince you! 😉

I used a large potato so that, paired with some salad, it was plenty big enough for dinner for two. I sprinkled some shredded cheese over top and it was absolutely delish. It was such a nice, healthy meal and on the table with pretty minimal effort. Win, win and win! :)

Speaking of winning, is anyone else obsessed with this Olympics? I’m a huge sports fan and especially love the winter Olympics. Being Canadian, we typically excel in the winter sports and this Games in particular my country is showing so well. I’m extremely proud and in awe of our incredible atheletes. Go Canada Go! Serves 2

Quinoa Stuffed Maple Sweet Potato
Save Recipe

Ingredients

  • 1 large sweet potato
  • ½ cup uncooked quinoa
  • 2 tbsp maple syrup
  • ¼ cup coconut bacon
  • ½ cooked chicken breast, chopped (optional)
  • 4 tbsp shredded cheese
  • sea salt & pepper to taste

Instructions

  1. Preheat the oven to 400
  2. Scrub the sweet potato and pierce it a few times with a fork
  3. Cook the potato until softened, about an hour
  4. Meanwhile, cook the quinoa according to the package instructions
  5. Once the potato is cooked, scoop out the inside into a large bowl and mash it together with the maple syrup. Mix in the cooked quinoa, coconut bacon and chopped chicken if you’re using it.
  6. Spoon the ‘stuffing’ back into the potato skins and sprinkle with shredded cheese

Ooooh, love the addition of coconut bacon to this recipe. Also like how you scooped out the sweet potato to mix with the other ingredients and then spooned it back in — I make a lot of stuffed sweet potatoes and they are usually toppling over with too many ingredients! This strategy would help.

I imagine this is really satisfying and tasty meal, plan to try soon. Thanks for the great inspiration!
