Chipotle Black Bean Dip

CHIPOTLE BLACK BEAN DIP

This dip is served warm and scooped up with tortilla chips. You could also use fresh cut veggie sticks if you wanted a healthier option!

This recipe is so easy.

What you will need:

  • black beans
  • cream cheese
  • Greek yogurt (or sour cream)
  • fresh lime juice
  • sea salt and cumin
  • garlic
  • grated cheese and fresh cilantro for garnish

Blitz everything except the cheese and cilantro in your food processor and pour into a baking dish.

Easy, right?

Next up, smother with cheese. 

I grate it and sprinkle some chili flakes on it to spice it up even further.

I loooove cheese.

Then sprinkle evenly onto your pureed bean and cream cheese mixture.

Time for the oven!

Bake it up and sprinkle with gorgeous fresh cilantro when it’s done.

I love the pop of green freshness!

We went. to. town on these. Delicious, spicy, cheesy, packed with zesty flavours. Love.

I even found an arrow shaped chip!

I may or may not have pointed at my dish and said “This way to good bean dip!” and then I may or may not have laughed at my own joke. I should have added corn!

Ingredients
  

  • 100 g cream cheese softened (I used ½ a 200g package)
  • 1 398 ml can black beans rinsed and drained
  • ¼ cup Greek yogurt
  • ½ lime juiced
  • ¼ cup chopped cilantro plus 2-3 tbsp for garnish
  • 3 cloves garlic minced
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tsp cumin
  • ½ tsp sea salt
  • 1 ½ cups grated cheese tossed with 2 tsp chili flakes

Instructions
 

  • Preheat oven to 375 and grease a medium sized baking dish (a pie plate or 8×8 would work well)
  • Combine all ingredients except for the grated cheese in a food processor and blend until creamy and smooth. Transfer the mixture to the prepared dish and top with the spiced and grated cheese
  • Bake for 15-20 minutes then under the broiler until bubbly and browned
  • Top with extra cilantro

  2. Ahh yes, I have heard of herbamare – Not much of a salt person, but when I do, I use herbamare. 😉
    I can see why you went to town with this dip. I would have went there twice. lol!

    1. Ha! I actually did go twice! 🙂 Joe and I ate half then a couple of days later, I reheated the leftovers with fresh cheese for a friend and I to share at work!! Even better and spicier the second trip. 😉
