Instructions

Step 1

First, start by preheating the oven and greasing an 8×11 casserole dish. You can use cooking spray or wipe the dish with avocado oil or a bit of butter on a piece of parchment paper.

Step 2

Next, in a large pot, add a couple of inches of water and bring it to a quick boil. Add the broccoli florets and steam for a couple of minutes or until fork-tender. Drain the water, and set the cooked broccoli aside.

Then, in a medium mixing bowl, combine the cream cheese, sour cream, and seasonings. Add the chopped chicken and steamed broccoli to the bowl and stir until everything is coated with the cream cheese mixture.

Step 4

Next, pour the chicken mixture into the prepared baking dish and top with the shredded cheese.

Step 5

Finally, bake until golden and bubbly. We like to broil it for a couple of minutes to give it a nice, crispy, cheesy crust on top.

Expert Tip!

Don’t overbake. Once it starts bubbling, it’s ready. Overbaking can cause the casserole to dry out or make the cream cheese sauce grainy.

Recipe Variations and Substitutions

Make this recipe a tad lighter by using Greek yogurt instead of sour cream.

Swap in a variety of steamed veggies such as cauliflower, green beans, spinach, and asparagus.

This recipe is naturally keto, but if you aren’t worried about your carb count, add in some cooked brown rice or pasta before baking to make it more hearty.

Skip the meat altogether and make it a vegetarian dish. Just add a couple more cups of veggies instead of the shredded chicken.
