- Carrots – We recommend using whole carrots instead of baby carrots. The full-sized carrots tend to have a more earthy ‘carrot’ taste which helps to balance the flavors. You can peel them or leave the skins on.
- Maple syrup – This will create the maple glaze on the carrots.
- Butter – The melted butter coats the carrots and helps to caramelize during roasting.
- Coconut sugar – One of our go-to sweeteners. You can also substitute brown sugar.
- Chili flakes – We need a little bit of heat and this adds just enough.
- Garlic – This adds a subtle flavor infusion. Garlic powder works too!
- Fine sea salt – A key ingredient for most recipes! A pinch of salt really brings out all of the flavors of your ingredients.

Equipment
- Small saucepan – Use this to melt together the glaze.
- Baking sheet – We recommend using a large, rimmed baking sheet.
- Parchment paper – This is a must for easy cleanup. We recommend unbleached parchment paper.

Step 1
First, start by preheating the oven to 400 and lining the baking sheet with parchment paper. Set it aside while you prepare the carrots and the glaze.
Step 2
Next, chop the carrots. We slice them into 2-inch chunks, cutting on a diagonal bias. Be sure to cut the carrots the same size so they will cook evenly.
Step 3
Then, prepare the glaze. Add the maple syrup, butter, coconut sugar, minced garlic, chili flakes, and salt to a small saucepan.

Next, set the pan over medium-low heat and simmer until the butter has melted and it is smooth.

Then, spread the carrots out onto the prepared baking sheet and pour the glaze overtop.
Toss the carrots in the glaze to coat them well.

Step 6
Next, pop the baking tray into the oven and roast the carrots for 20-30 minutes. Cooking times may vary depending on the size and thickness of the carrot pieces.
Every 8-10 minutes, take the baking sheet out of the oven and give the carrots a stir to prevent any hot spots or burning.

Step 7
Finally, once the carrots are golden, fork-tender, and the edges have browned, take them out of the oven and serve.

Once the carrots have roasted, sprinkle them with a pinch of flaked sea salt before serving to really enhance the flavor. Based on my firsthand experience with professional chefs, they love using Maldon flakes. It is a classic.
