- almond flour – You can buy this for a decent price at bulk stores, Amazon, or Costco. Be sure to purchase almond flour and not almond meal. More on this in the FAQS below. Be careful with any flour substitutions as the results can vary drastically.

- maple syrup – My favorite natural sweetener. You can also swap it for honey, coconut sugar, or brown sugar.
- vanilla extract – A cookie essential.

- cookie sheet – We use a large-rimmed cookie sheet for this recipe.
- parchment paper – This is essential for easy cleanup! We recommend using unbleached parchment paper.
- mixing bowl
- small spatula or spoon – This is for mixing the dough. We love using small spatulas to scrape down the sides and get every bit of the cookie dough. They are definitely one of our favorite kitchen tools.

Step 1
First, start by preheating the oven and lining the baking sheet with parchment paper. Set that aside.

Next, in a large mixing bowl, add the dry ingredients – almond flour, baking powder, and fine sea salt.
Whisk together until the baking powder is fully incorporated.

Then, stir in the wet ingredients – maple syrup, peanut butter, and vanilla.
The mixture will begin to form a nice, soft cookie dough.

Next, using a cookie scoop roll tablespoon-sized balls onto the prepared baking tray.
There should be room for five rows of three for a total of 15 balls.

Then, using a fork, press the cookie balls down firmly to flatten them then carefully slide the fork off.
Repeat in the opposite direction to create that classic crisscross pattern.

Next, place the baking sheet in the preheated oven and bake for 10-12 minutes. Rotating the sheet halfway through helps with even baking.
Watch that the bottoms aren’t burning – but be careful as they will be fragile!
