Crispy Peanut Butter Balls
One of my most favorite snacks are these crispy peanut butter balls. They are sweet and chewy and peanut buttery. Yum, right? I love rice puff recipes, especially when they are simple and no bake. Remember this recipe for rice krispie peanut butter treats to satisfy your cravings.

What you need for this recipe:
Don’t you just love a short ingredient list? Just four things are needed for these rice krispie treats with peanut butter.
- natural peanut butter – this means the only ingredient listed is peanuts
- brown rice syrup – this liquid gold is the BEST binder
- rice crispy cereal – I use brown rice crispy cereal
- vanilla

Step by Step
Now that we’ve gathered our ingredients let’s get started on the rice krispie peanut butter treats.
First, measure out the rice crispies into a medium-sized mixing bowl and set them aside.

Next, in a small saucepan over low heat, stir together the peanut butter and brown rice syrup. Make sure to keep stirring and keep the heat low because this can burn quickly if you aren’t careful.

You can use smooth or crunchy peanut butter. Personally, I like crunchy for this peanut butter rice krispie treat recipe so you get a nice little crunch of peanuts with every bite.

Once the mixture is smooth and stirrable, remove it from the heat and stir in the vanilla. Then pour it over the rice krispies, using a spatula to scrape the sides and get all of the peanut butter mixture out.
Stir it well to combine. Sometimes I use a spatula, sometimes I use my hands. 😉

Form the mixture into balls using your hands or a small cookie scoop. Finally, pop them into the fridge to set.

Enjoy these healthy rice krispie treats as an after-school snack or as pre-workout fuel. They feature a nice slow release of energy from the complex carbs.

Peanut Butter Rice Krispie Treats
Ingredients
- 1/2 cup natural peanut butter
- 1/4 cup brown rice syrup
- 2 cups rice crispy cereal * I use brown rice variety
- 2 tsp vanilla
Instructions
- Line a tray with parchment paper and set it aside.
- Measure the rice crispies into a medium mixing bowl and set the bowl aside.
- Set a small saucepan over medium-low heat and stir together the peanut butter and brown rice syrup. Stirring frequently, cook until combined, about 2-3 minutes. Be sure to keep stirring to make sure it won't burn.
- When the peanut butter mixture is blended together remove from heat and stir in the vanilla. Pour it over the rice cereal and mix it together well. Use a spatula or your fingers.
- Form into heaping tablespoon-sized balls and place them on the prepared tray. When the mixture starts to stick to your hands, wet them a bit to prevent it. You could also use a small cookie scoop if you have one.
- Refrigerate for 10-15 minutes to firm up.
- Store in a sealed container in the fridge for up to 7 days.
Notes
- use a fresh jar of drippy peanut butter for the best results.
- substitute any nut butter.
- add chocolate chips for a peanut butter cup twist.
