Ingredients
- pecans – use raw and unsalted pecans.
- almonds – same as above, use raw and unsalted nuts.
- dates – there are over 200 types of dates! For this recipe, I use pitted medjool dates or deglet noor dates which I buy for a great price at Costco.
- vanilla extract – this adds a cozy sweet taste. It is optional.
- fine sea salt – a pinch of salt really brings all the flavors together.
Equipment
food processor – I determined through extensive recipe testing that it’s possible to use a blender if it is a high-powered version like a Blendtec or Vitamix.
Instructions
Step 1
Start by adding the pecans and almonds to the food processor.
Step 2
Then pulse the nuts until they are broken down into fine pieces with no large chunks.
Step 3
Next, add the dates, vanilla, and salt to the nut mixture. Process until a sticky dough starts to form. It should stick together when you pinch it with your fingers.
Step 4
Line a loaf pan with parchment paper and dump the mixture into it. Press firmly, using your fingers or a flat spatula. Make sure it is even and pressed down really well so it will hold together.
Step 5
Place the loaf pan in the freezer for about 25 minutes for the mixture to set. Once it is firm, cut it into bars or squares.
Expert tip
Make sure the dates are soft and moist! This makes it so much easier to blend them in the food processor. If your dates are on the harder side, soak them in warm water for about 10 minutes and drain before blending them.
Recipe variations
- Add a small handful of shredded coconut for a tropical twist.
- Stir in a few chocolate chips before freezing for a cookie dough flavor.
- Sprinkle in some warm spices like cinnamon or nutmeg to give them a little bite.
FAQS
While a food processor is the easiest way to achieve the desired texture, you can also use a high-powered blender. Just be cautious and blend in small batches to avoid straining the motor.
If you prefer sweeter Larabars, you can add a few more dates or a natural sweetener like honey or maple syrup. Alternatively, if you want them less sweet, reduce the number of dates.
Storing and freezing
These bars will get soft at room temperature so it is best to keep them in the refrigerator in an airtight container.
They can be frozen for up to 3 months.

Instructions
- Add the pecans and almonds to a food processor and pulse them until they are broken into fine pieces.
- Add the dates, vanilla, and salt to the food processor.
- Process until a sticky, dough-like texture begins to form. The mixture should stick together when pressed between your fingers.
- Line a loaf pan with parchment paper and press the mixture evenly into the pan. Using a flat spatula helps to firmly flatten the mixture out.
- Place the pan in the freezer for 15-20 minutes to harden. Then slice into bars or squares.
