Quinoa & Eggs – It’s All Good

At this point my trip is winding down and next week I’ll share some stories and photos of my adventures with you. Meanwhile, I have one last review from Gwyneth Paltrow’s cookbook “It’s All Good”.

This one isn’t technically a recipe, it’s more like a meal idea. Topping a bed of quinoa with an egg is something I had never thought of and what a smart idea it is! I used my own recipe for onion flavoured quinoa for my dish but there is a recipe for quinoa in the book as well as a few methods for cooking the egg. I used her method that used olive oil for frying the egg.

It turned out perfectly crispy around the edges and the yolk was smooth and velvety.
This was a satisfying meal, packed with protein for staying power.
I really recommend this for a quick weeknight meal when you don’t want to spend a lot of time but still want a lot of flavour. I cracked some fresh pepper over top and promptly ate the whole plate.

I highly enjoyed this and many other recipes from this cookbook.
Well done, Gwyneth. I forgive you for “Shakespeare in Love” now. Just kidding! “It’s All Good”.
