Instructions for this recipe
First, start by cutting the potatoes into fries. Using a mandoline is the easiest way to achieve the perfect size and uniformity.
Next, soak the slices in a large bowl of ice water. This process helps you achieve a super crispy fry by drawing out the excess starch and moisture from the potatoes.
If you were to deep fry these, it also helps to keep them from sticking together.
Soak them for a minimum of 30 minutes up to overnight.
After the soak, preheat the oven to 450.
In the meantime, drain the potatoes from the ice water and dry them thoroughly with a clean kitchen towel and place them back into a mixing bowl. Be sure to really pat them dry.
Next, toss them with olive oil and coarse sea salt.
Finally, spread them out evenly in a single layer on a parchment paper-lined baking sheet.

- After soaking, preheat the oven to 450. Line 2 baking sheets with parchment paper and set aside.
- Drain the water from the potatoes and dry them thoroughly with a clean tea towel.
- Place them in a bowl and toss well with the olive oil. Sprinkle on the salt on toss again.
- Spread potatoes evenly in a single layer on the prepared baking sheet. Ensure they are spaced out and not touching.
