Spelt Flour Flatbread
This Spelt Flour Flatbread recipe is surprisingly easy and so satisfying to make! Instead of the stale wraps that come enveloped in plastic on the store shelves, try your hand at these healthy, fresh and pillowy homemade flatbread.
It’s DIY time! 🙂 This edition felt ambitious as I’ve never really considered myself a ‘bread maker’ of any kind.
These Spelt Flour Flatbread however, have a simple ingredient list and are totally not intimidating. Anyone can make this recipe!
SPELT FLOUR FLATBREAD
My goal was to make a healthier alternative to the wheat wraps or tortillas you find in the bread aisle.
I always have a stash of spelt flour and I hoped it would also work for some homemade wraps. Add that to the binding power of the Greek yogurt and the earthy flavours of cumin and coriander? Come on!
The result is a puffy, hearty flavoured flatbread that blew the store bought version right out of the water. These versatile wraps actually tasted like a wrap. Awesome!
HOW TO MAKE SPELT FLOUR FLATBREAD
It was very simple process to throw together.
Literally, just mix everything together and roll it into a ball.
Lol.
Then pop the dough into the fridge for an hour.
After chilling in the fridge, break the dough into 6 small balls and roll them out into thin circles.
And yes, that is my water bottle subbing for a rolling pin. I seem to have misplaced my rolling pin? How that happens, I have no idea but it seems as though I have actually lost a rolling pin!
Once your balls have all been rolled out, heat up a small pan with a little olive oil and a little butter. Using a bit a both keep the butter from burning.
Once the pan is all warmed up start cooking the flatbread, one at a time.
Cook them for about 1 1/2 -2 minutes per side.
Transfer them to a side plate, layering with a paper towel between them as they come out of the pan.
I serve these immediately and usually enjoy them wrapped up with some garlic & lime red cabbage slaw with salsa and shredded cheese.
They would also be super good with a big bowl of hummus for dipping.

Spelt Flour Flatbread
Ingredients
- ¾ cup spelt flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ¾ cup greek yogurt – natural flavour
- 1 tsp ground coriander
- ½ tsp ground cumin
- Olive oil & unsalted butter for cooking
Instructions
- Place all the ingredients except the olive oil and butter in a medium bowl and mix to form a dough. Knead for a minute or so and roll into a ball. Wrap in saran wrap and chill dough in the fridge for an hour
- Divide the dough into 6 balls then roll each one out into a circle on a floured countertop
- Heat a small amount of olive oil and a small pat of butter in a small frying pan. Cook the flatbreads one by one over a medium-low heat for about 1 ½ minutes each side
- Serve immediately
Just made these and they are very wet. Will 100% need more flour.
I thought the serving of 6 flatbreads meant 6 flatbreads, I got 2 big enough to make single-serving flatbread pizzas and since it needs to rest for an hour, I didn’t have time to make a second batch for the 4 people I was serving. I also needed over twice the flour it calls for because it is a very sticky dough. Just disappointed in the results since I was entertaining.

And used half of it to make the flatbreads as a recipe directed, the rest I used to make a couple of pizza crusts in A Preheated cast-iron skillet it came out great, the best ever. I’ve been experimenting a lot lately with the spelt flour and this recipe is a keeper it turned out to be the best. No longer looking For a spelt pizza recipe or flat bread! I love to make my rotis with different kinds of flour like rice, millet, chickpea, soya bean , whole wheat, corn flour etc. But I have never tried spelt. Now after seeing the rotis (flatbreads) you have made, you got me interested in spelt too that I cannot wait to try it out soon. They look so delicious! Thanks for sharing.

These look terrific. Do you think they could be baked? Perhaps on parchment paper? I’m just looking for a way to do them all at once instead of one at a time in the pan.

I made these today, and the dough was REALLY sticky at first, so i needed to add more and more flour. But maybe i got the ‘cups’ wrong (we don’t use that in Holland). How much is 1 cup of flour (in grams) and how much is 1 cup of yoghurt in this recipe?

These were great. I just used ordinary yoghurt. Forgot about the oil in the pan but it worked fine as it was non stick anyway. Its quite a sticky dough so you will need to keep flouring it as you roll it out but it’s nice and soft so really quick to roll out. Others I have made with water have been quite tough.

I love that you use all organic ingredients 🙂 I’ve recently made flatbreads/handmade soft tortillas using a mix of spelt, rye and chickpea flour, and it worked wonderfully! Yum!

Can water be used in place of the greek yogurt? Would like to avoid animal products if possible and this ingredient list is otherwise simple and basic… new to baking, not so much to cooking!

Hmmm … I really don’t know, I only tried it with the greek yogurt. Perhaps coconut milk yogurt might work if your looking for a vegan option?
Look for Tys Conscious kitchen for a vegan alternative. I believe on the website it’s called alkaline flatbread. I’ve tried it and it’s delicious!

Can these be made vegan?
Hi Tarey! I haven’t made these vegan but if you know of a good yogurt substitute you could totally try. I have only found coconut based vegan yogurts and they definitely don’t work in this recipe with the sweetness. Good luck!
Hi there I would use coconut yoghurt. There are some that aren’t as coconutty in flavour and obviously not the sweetened ones 😊
I’m pinning these! I love spelt tortillas but have never made them. I’m going to have to search for this spelt flour and make my own. These flat breads would be perfect for school lunches. My daughter loves taking “special” foods and making her friends with plain sandwiches jealous. lol 😀
Ha! Your daughter is so cute:) I found my spelt flour in the organic section at the grocery store, but it’s probably found in the bulk store, also.
Can you freeze these? Might be a good make ahead for school lunches?
