Caramel Apples

This post features my super simple Caramel Apples Recipe.
What I like most about these candy apples is they don’t use any white sugar or premade caramel squares. My candy apple kit is much healthier yet still just as delicious.

What you need for this recipe
Let’s start with the obvious. Apples!
My go-to is always Honeycrisp (love love love) but choose whichever you prefer. Some people like a bit of a sour punch and go for granny smith or perhaps choose whatever is best locally in your area.
First, slice up the apple into bite-sized pieces.
Chop the apple into four, then eight, then sixteen even pieces.

Resist the urge to snack on the apples while chopping. Or, have an extra one on the side to eat. ?
They are so tempting. I LOVE a good apple.
After the slicing is done, stick a toothpick in each. If you happen to be making halloween candy apples you could choose Halloween-themed picks to be extra festive.
How to make the caramel
My recipe for caramel for apples consists of three simple ingredients:
- almond butter – you could use any kind of nut butter but smooth is preferred
- brown rice syrup – a fabulous ingredient that replaces corn syrup
- vanilla
Over medium-low heat, melt together the almond butter and brown rice syrup.
You want to have a nice smooth, well-blended mixture. Once it is all creamy, remove it from the heat and hit it with the vanilla.
That’s it! My candy apple slices are vegan and gluten free making them friendly for most diets.
Assemble the Caramel Apples
Line up the chunks of apple you sliced on a baking tray lined with parchment paper.
Using a spoon cover the slice with the caramel sauce you just made and repeat until all the slices are coated.
Pop the tray into the fridge for fifteen minutes to set.

The almond butter caramel is rich and chewy. Just as good as those brand name squares but with the added benefit of using natural ingredients. These caramel candy apples can hold their own.

Caramel Apples
Ingredients
- ½ cup almond butter
- ½ cup brown rice syrup
- 1 tbsp vanilla
- 1 large apple
Instructions
- Line a baking sheet with parchment and set aside.
- Chop the apple into 4, then 8, then 16 chunks and stick a toothpick in each. Line them up on the prepared baking sheet.
- In a small saucepan melt together the almond butter and brown rice syrup over medium-low heat. You want the mixture to be fairly liquid and creamy.
- Remove from the heat and stir in the vanilla.
- Working quickly, with a spoon cover the apple slices with the caramel.
- Leave in the fridge for 15 minutes to set.
- Enjoy immediately. The caramel will melt at room temperature so don't leave these out!
Notes
- use a honeycrisp apple for a sweeter treat or a granny smith apple if you want a bit of a sour pucker

Very cool caramel idea! I love caramel apples, but the effort of doing a proper caramel (and not having it harden up too fast) means that I don’t do them very often. But this is a very cool twist, and almond butter is awesome with apples to boot. Great stuff!

I love this idea of a caramel apple using almond butter. What’s even better is that it comes in slices or bite size pieces so that you don’t feel so guilty for eating a whole apple. This is a great idea.
