Why we love this recipe
These walnuts have a nice balance of spices and a hint of sweetness. The blend of seasonings isn’t overpowering and you will find yourself helping yourself to a second handful!
This is a super easy recipe! Just stir and roast. Done.
Added bonus: these walnuts are also naturally vegan and gluten-free.
Ingredients
- walnuts – walnuts have a rich and buttery texture that goes so well with this spice blend. You could also use pecans, almonds, cashews, or a mix of all of them.
- olive oil – coconut oil and avocado oil can be used as substitutes.
- dried onion flakes – dried rosemary is a great substitute.
- granulated garlic
- granulated onion
- sugar – we mostly use coconut sugar but sometimes substitute maple syrup which is also super good.
- salt – fine sea salt or kosher salt will both work fine.
- cayenne pepper – this is optional but brings a bit of heat.
Equipment
- mixing bowl
- spoon
- baking sheet
How to make spiced walnuts
Step 1
First, preheat the oven and line a baking sheet with parchment paper.
Step 2
Then, pour the walnuts into a large mixing bowl.
Next, cover the walnuts with olive oil and stir well to coat all the little crevices you can.
Step 3
Meanwhile, mix all of the spices together, and then sprinkle the spice mixture over the olive oil-coated walnuts.
Stir it all together well. Tossing to completely coat the nuts with all the savory goodness.
Step 4
Then, transfer the seasoned nuts to a rimmed baking sheet lined with parchment paper in a single layer and pop them in the oven to bake.
Step 5
Remove the pan from the oven and let the spiced walnuts cool completely on the baking sheet.
They will continue to crisp up as they cool down, so be patient and wait for them to completely cool.
Expert tips
- Be sure to spread the walnuts in an even layer on the baking sheet. This prevents them from becoming overcrowded and allows for uniform roasting.
- Remember that different oven temperatures can vary, so it’s essential to keep a close eye on the walnuts during the roasting process to prevent burning.
Recipe variations
- Spin this recipe into curry spiced walnuts by adding curry powder, ginger, turmeric, and cumin.
- Make a sweeter version by eliminating the onion and garlic and using maple syrup, nutmeg, vanilla, and cinnamon instead.
Serving suggestions
- As a snack, out of a little bowl.
- Add them to your salads! Nuts add wonderful crunch and texture as well as healthy fats that keep you satiated (full). We love them on this Arugula Salad.
- On a charcuterie or fruit and cheese board! The flavor of this savory roasted nuts recipe would complement a platter of sweet fruit and mild cheese.
- Give as gifts! Put them in a little jar and wrap them with a ribbon or a bow.
FAQS
Keep a close eye on the nuts while they are in the oven. Stir them occasionally to prevent any hot spots. Additionally, you can lower the oven temperature slightly or reduce the roasting time if you find that the spices are browning too quickly.
We recommend letting the walnuts cool completely for the best-tasting results. This allows the walnuts to become crisp and enhances the flavors. Typically takes around 15-20 minutes for the roasted walnuts to cool down.
Storage
It is important to remember that nuts lose their crunch when exposed to air so store these walnuts in a sealed Ziploc bag or airtight container for them to maintain their crispness and texture.
When properly stored, these walnuts will last for up to 2 weeks at room temperature or up to a month stored in the refrigerator.

These are so delicious and addictive! My husband loves them and is even buying huge bags of walnuts for me to make them for him. I do add a little bit more garlic salt and smoked paprika to the recipe. So good and thanks for the recipe!
Love this Judith! And smoked paprika sounds awesome.
Threw them out
Hi I’ve made this recipe twice, I chopped the nuts smaller in a food processor, added some fresh rosemary along with the other ingredients. I love these. Thank you for the recipe.
These were fantastic. I’ve made them twice this month; the second batch I added a little more cayenne and just a small pinch of sugar to get a sweet and spicy flavor. These are a huge hit with everyone! I’m going to add these to my Christmas food gift list. Thank you for sharing this great recipe!
Awesome Dawn! Homemade gifts are the BEST. And I love a pinch of sugar in there. I’ve been making roasted pecans with maple syrup and cayenne lately and loving it. I’ll be posting that recipe soon. 🙂
These came out perfectly! I was looking for something different to do for edible gifts this year and this fit the bill perfectly.
Awesome Julie! Happy holidays to you 🙂
Oh wow, I love this idea. I usually make candied nuts but this is something different. Love it. I’m going to give this a try.
Yes, it is a nice change from the sweet stuff. Thanks Natalie!
These are a great addition to a charcuterie or cheese board! I love how easily they come together!
Yum right? Thanks Cynthia!
What a great switch from the sweet, crunchy nuts. Actually I prefer the savory so I decided to try out your recipe to put in my gift baskets. Unfortunately we ate the nuts before they’d go into the baskets. Yes we found them to be that good. We had no self-control whatsoever. I’ll be making two more batches tomorrow. Thank you for the recipe.
I found it confusing whether you wanted granulated onion/garlic or powdered onion or garlic. Granulated and powdered are not the same thing, so when you say granulated onion or garlic powder, which is it you want?
Granulated for both! I’ve updated the recipe. Thanks for pointing that out, much appreciated. 🙂
These sound great! As soon as I saw charcuterie I pictured a bowl on our Friday night board. Pinned to make!
Right?! Gotta have some spiced nuts on that board!!!
I love oven toasted walnuts but have yet to try a savoury recipe. Thanks for the recipe!
I’m loving the savoury spin! Thanks Cynthia. 🙂
I love these! I never would have thought of putting savoury spices on walnuts – yum!
Oooh I will love these. My downfall is chips so this would be a great savoury replacement.
You and me both, sister!! Chips can rule my life if I let them. 😉
LOVE the savory take on this Can’t wait to snack on this
They really are so good! Thanks. 🙂
These would be such a flavor burst added to Buddha bowls! I adore flavored nuts!
I threw a handful in with my tuna salad today!
My preference is always savoury. Thanks for a great, healthy snack idea!
So satisfying! Thanks Vanessa. 🙂
Many recipes out there are sweetened with sugar or maple syrup. I love that this one is sugar free yet packed with lots of flavour. Can’t wait to try it!
I find the less sugar, the less I need to satisfy the snack craving! This batch will last us a week whereas somehting sugary won’t last two days. 😉
ooo danger alert!! These look way too addictive. Nuts are such a nutritious, healthy snack and I would love to try these out, especially since they are savoury and not full of sugar.
Right? I find that I will eat less of the savoury ones. If these were candied nuts, look out!
I would love this on my salad, yum!
Such a GREAT addition your greens! Thanks Joss. 🙂
