Fruit and Nut Bars
These delicious Fruit and Nut Bars feature dates, cranberries, almonds and almost every seed you can think of! Pumpkin seeds, hemp seeds, chia seeds, sesame seeds, black sesame seeds, this recipe has them all. Naturally sweetened, vegan and gluten free.
These tasty treats are a result of the great cupboard and fridge purge of 2019.

I had a few tablespoons left of a whole bunch of different seeds from the bottoms of my bulk bags as well as a Costco sized bag of dates in the fridge that needed to be used up.
Oats? Check.
Peanut butter and brown syrup? Check.
I had all the makings for some pretty wicked granola bars. Do people even say wicked anymore? I’m probably showing my age. I should describe these granola bars as sick or something like that. Haha.
Verbiage aside, these bars are super tasty and that is universal. I used a new to me method to get that really sleek flat top. My coworker taste tester said they looked like marble.
They were popular by the way. Sick!
How did I get a really flat top on the bars? After I pressed granola into the parchment lined pan, I laid another piece of parchment on top and I used a container of frozen bone broth from the freezer for something really hefty to push the ingredients firmly down. Then I popped it into the freezer and left the heavy container on top of it.
It worked like a charm! They sliced up super straight, had firm, flat tops and my OCD self was in heaven.

Healthy Fruit Nut and Seed Bars
Ingredients
- 1 1/2 cups quick oats *certified gluten free for allergies
- 1/2 cup roasted almonds roughly chopped
- 1 cup dates roughly chopped
- 2 tbsp dried cranberries
- 2 tbsp chia seeds
- 2 tbsp pumpkin seeds
- 2 tbsp hemp seeds
- 2 tbsp sesame seeds
- 2 tbsp black sesame seeds
- 1/2 cup brown rice syrup
- 1/4 cup peanut butter
- pinch sea salt
Instructions
- In a large mixing bowl, stir together the dry ingredients (the first 9) and set aside.
- In a small saucepan over medium low heat, melt together the brown rice syrup, peanut butter and sea salt. Stir until smooth.
- Pour the peanut butter mixture over the dry ingredients and stir well.
- Line a 9×9 dish with parchment and press the mixture in well. Cover it with another piece of parchment and use a heavy object (I used a frozen container of bone broth) to really press it down well. Leave the heavy object on top and pop the dish into the freezer for an hour.
- Cut into bars and store in the freezer.
