Peanut Butter Rice Krispie Treats

One of my most favorite snacks are these Peanut Butter Rice Krispie Treats. They are sweet and chewy and peanut buttery. Yum, right? I love rice puff recipes, especially when they are simple and no bake. Remember this recipe for rice krispie peanut butter treats to satisfy your cravings.

What you need for this recipe:

Don’t you just love a short ingredient list? Just four things are needed for these rice krispie treats with peanut butter.

Step by Step

Now that we’ve gathered our ingredients let’s get started on the rice krispie peanut butter treats.

First, measure out the rice crispies into a medium-sized mixing bowl and set them aside.

Next, in a small saucepan over low heat, stir together the peanut butter and brown rice syrup. Make sure to keep stirring and keep the heat low because this can burn quickly if you aren’t careful.

You can use smooth or crunchy peanut butter. Personally, I like crunchy for this peanut butter rice krispie treat recipe so you get a nice little crunch of peanuts with every bite.

Once the mixture is smooth and stirrable, remove it from the heat and stir in the vanilla. Then pour it over the rice krispies, using a spatula to scrape the sides and get all of the peanut butter mixture out.

Stir it well to combine. Sometimes I use a spatula, sometimes I use my hands. 😉

Form the mixture into balls using your hands or a small cookie scoop. Finally, pop them into the fridge to set.

Enjoy these healthy rice krispie treats as an after-school snack or as pre-workout fuel. They feature a nice slow release of energy from the complex carbs.

Like I said earlier they are the perfect ‘little something’ to have before a workout as they aren’t heavy and are healthy, plant-based energy that will keep you moving.

I’d also recommend them for a afternoon pick me up when you find yourself looking for something sweet. My picky fella loves these balls and that is a strong seal of approval. 😉

  • Line a tray with parchment paper and set it aside.
  • Measure the rice crispies into a medium mixing bowl and set the bowl aside.
  • Set a small saucepan over medium-low heat and stir together the peanut butter and brown rice syrup. Stirring frequently, cook until combined, about 2-3 minutes. Be sure to keep stirring to make sure it won't burn.
  • When the peanut butter mixture is blended together remove from heat and stir in the vanilla. Pour it over the rice cereal and mix it together well. Use a spatula or your fingers.
  • Form into heaping tablespoon-sized balls and place them on the prepared tray. When the mixture starts to stick to your hands, wet them a bit to prevent it. You could also use a small cookie scoop if you have one.
  • Refrigerate for 10-15 minutes to firm up.
  • Store in a sealed container in the fridge for up to 7 days.

Notes

  • use a fresh jar of drippy peanut butter for the best results.
  • substitute any nut butter.
  • add chocolate chips for a peanut butter cup twist.

    Does it work to press the mixture into a parchment-lined pan for BARS?
    I saw a similar recipe for bars, calling for as much syrup as peanut butter–yours has 1/2! ( :

    Is there a chocolate topping made with cocoa powder?

    Is it OK to double or triple the recipe?

    1. Hey Mel! Yes, you could totally press this into bars. I would double the recipe for an 8×8. If you want to do a chocolate drizzle topping I would melt 1/4 cup of dark chocolate chips with a teaspoon or so of coconut oil and pour that on top.

    My daughter (age 7) loves cooking but I HATE the mess. These bars are a gift with only 4 ingredients, low mess and the kids LOVE them. These are truly easy and a great hit in my family, great for snacks on the go for my active kids.

    Tiny balls of snacky deliciousness. Love em! Great recipe idea, and wonderful execution. I love recipes that use natural peanut butter too (made the switch to it years ago and never looked back). I particularly like that these are so tiny and bite-sized. It makes it feel more acceptable to eat 20 of them at a time.

  13. I imagined that you would put cooked rice into this recipe when I saw the title.

    I’m glad you didn’t, because the rice puffs sound a lot more appetizing (I like the crunch).

    My favourite part of this recipe is that is requires no cooking, because I would probably just heat the ingredients in the microwave! It seems like a quick snack to make.

    I don’t have any brown rice syrup on hand though. Do you know of any substitutions I could use?

    1. Hey Elle! It is such a quick & simple recipe. For brown rice syrup substitutions you could try honey, agave or maple syrup maybe? I’m not sure how they would hold together though. I find the brown rice syrup a great binder. Let me know what you try and how it works:)
