Garlic Butter Fried Corn

Sweet corn is very popular vegetable on family dinner tables, and this recipe for Garlic Butter Fried Corn is a delicious, simple side dish to make with it. This is an easy, cheesy stovetop corn recipe you can make from fresh or frozen corn!

GARLIC BUTTER FRIED CORN

Who doesn’t love corn with butter? This parmesan skillet corn recipe matches the fried sweet corn with a garlic butter sauce to remember. It’s delicious served alongside your favorite chicken or steak.

INGREDIENTS FOR GARLIC BUTTER FRIED CORN

  • corn kernels – fresh or frozen – see tips below for cooking frozen corn
  • butter
  • minced garlic
  • chopped parsley
  • Parmesan cheese

HOW TO COOK FROZEN CORN

Personally, I like to use frozen for this parmesan corn because I can purchase a brand that is labeled non-GMO. Corn is one of the most common genetically modified food out there and I simply don’t trust the method.

Look for organic varieties. There are a few local companies that offer frozen non-GMO corn products and I love to support that.

So how do you cook frozen corn? The main thing is not coming up with a pile of mush, am I right? 

This buttered corn recipe needs the kernels to have a nice, sweet bite.

These are my tips for cooking perfect corn from frozen!

  • Rinse the frozen corn with cold water to thaw it
  • Don’t boil it! I think the package says to but don’t do it. It literally will suck the color and the life out of your sweet corn. Boo-hiss on boiled corn.
  • Saute the corn instead. This way it will keep its crispness and bright yellow hue.
  • Salt to taste after serving. Salting while cooking will draw out moisture and with that goes your sweetness. 

HOW TO MAKE FRIED CORN

Place your corn in the skillet and add the butter on top. Usually, it is the other way around but when cooking sweet corn, having the butter melt over the top is the way to go.

Once the butter has almost all melted, add the minced garlic and cook, stirring for another two minutes.

If you’re a fan of garlic you are going to want to really inhale the aroma of this fried corn recipe.

Remove from the heat, sprinkle in chopped parsley, and your freshly grated parmesan cheese. I wholeheartedly recommend using the real Parmesan and not the pre-shredded stuff.

This is a delicious summer side dish that is sure to be a favorite on your dinner table.

Ingredients
  

  • 1 lb corn kernels – use fresh or frozen
  • 4 tbsp unsalted butter
  • 2 cloves garlic minced
  • 2 tbsp freshly chopped parsley
  • ¼ cup grated parmesan cheese – use the real stuff!

Instructions
 

  • IF USING FROZEN CORN – Rinse the frozen corn in a mesh strainer with cold water. Once the ice melts, stop the water and shake the kernels really well. Shake all the water off before cooking.
  • Add the corn to a large, non-stick skillet and place the butter on top of it. Set the heat to medium-high and stir until the butter starts to melt. Toss in the minced garlic and cook, stirring frequently, for another two minutes.
  • Remove the pan from the heat and stir in the parsley. Season to taste with salt and pepper and sprinkle the parmesan cheese on top. Serve warm.

    1. You could! I would let it cool completely before freezing. It should be good for up to 3 months in the freezer.
