Creamy Cilantro Lime Dressing – Vegan & Gluten Free

by Sharon on June 11, 2014

This creamy combo of avocado with cilantro and lime will convince you to never buy the bottled stuff again! This dressing is both easy and delicious which are two of my favourite things. 🙂

Look at this avocado! Who needs cream when you have this decadent, velvety fruit to add to your freshly made summer salad dressings?

How about some cilantro? If you don’t like it I feel sorry for you. 😉

I had planned on making this dressing in my food processor, but I felt like I’ve been making so many recipes with it lately. And to be perfectly honest, I just didn’t feel like lugging the thing out and dealing with the racket it makes. I wanted simple and I did not feel like doing a ton of damn dishes. 😉

Enter my hand blender!

Scary claw!

OK, so this is how easy this dressing recipe is.

I simply measured all of the dressing ingredients into a large mason jar and blended it up. I took two minutes total and including my knife and spoon, four dishes total.

The hand blender worked like a charm. Perfectly smooth and pourable.

Creamy, tangy with that undeniable fresh, clean cilantro flavour. I had it tossed over a simple plate of romaine but I plan to use it on some bean or grain based dinner salads. What’s better than the summer season for fresh salads with amazing dressings. Try this one and you won’t be disappointed.

OMG this on pasta would be amaze!! I can't believe how easily it mixes. Well done my friend ;) Great dressing! I may even eat a salad now, lol!

Yes! On pasta! Great idea. :) Maybe even spiralized zucchini noodles (if I ever get a spiralizer ;) ).

Yum Sharon, this looks delicious! I love the idea of blending it all in a mason jar. I get so tired of cleaning my food processor! I must give this a try soon! :-)

I've said it before and I'll say it again: If there's one thing I love it's not doing dishes. ;) Thanks Lauren!

I love the color of this dressing. It sounds delicious! I love my immersion blender, it really makes creating dressing so easy. Pinning!

I really need to use it more! Sometimes I forget I have it. Thanks Cindy! :)

Sounds delish. Using one of those single use blender cups is not too bad either I think? As long it doesn't need to be blended the same way it's pretty quick and probably easier to clean. I'm gonna try this though might need to use lemon for now.

Lemon would be lovely in this! Thanks so much Juan! :)

Looks delicious and easy! Do you know about how long this dressing keeps in the fridge? Thanks!
Sharon December 7, 2014 at 9:44 am
I would say no more than a week in the fridge. Hope you love it, Eileen! :)

I just tried this dressing and it was AMAZING. Like wow, can't stop eating it and going to eat it everyday amazing!!! I had it on top of a rice bowl with tomato cucumber pico, rice, black beans, and corn :)

I love the sound of your rice bowl! Great idea. :) Thanks Amanda.

This is definitely delicious, 😀, thank you for sharing! I want to make a bigger batch, I simply don't have the time to make a fresh batch every day lol... How long would this keep in the fridge? Thanks
Sharon August 8, 2016 at 11:54 am
I'm sure you could double the batch. The citrus should keep the avocado in the dressing from browning. I would imagine it would stay in the fridge for 3-4 days.
