Sweet Potato Breakfast Bowl

One of the most important meals of the day is a whole food breakfast.

This paleo breakfast bowl is just that. It’s also nice to have a whole30 breakfast with no eggs for a change!

Don’t get me wrong, I LOVE eggs but it is also nice to enjoy a paleo breakfast with no eggs when you want variety.

Did I mention I am doing the Whole 30 challenge again? Yup, that’s right! And with my new staying at home all the time lifestyle I think I’ll need to stick to it for a few more than the thirty days to feel more like myself again if you know what I mean.

But, I am in my groove with it now as we are seven days in as I write this. I like doing this particular challenge because you can have as much real food as you want. Just no sugar or dairy which are the foods I tend to binge on so it’s a good thing for me.

So what can I eat for breakfast on whole 30?

What can I eat for breakfast if I have no eggs?

I have a bunch of sweet potato breakfast ideas swirling around in my head and I decided to start with this healthy breakfast bowl.

WHAT YOU NEED TO MAKE THIS SWEET POTATO BREAKFAST BOWL:

  • ripe banana
  • cooked sweet potato
  • cinnamon
  • toppings – nuts, seeds, almond butter

HOW TO MAKE THIS HEALTHY BREAKFAST BOWL:

Omgsh you guys this recipe is so easy! The first thing is to mash your ripe banana.

Add in the cooked sweet potato and cinnamon and mash again!

Could it be any easier?

And that is it, folks! Enjoy with your favourite toppings. I always add ground flaxseed, chia seeds, and a generous dollop of almond butter.

Once I am finished with the whole30 I will add a tablespoon of maple syrup and will be loving life.

TIPS + FAQ’S FOR THIS SWEET POTATO BREAKFAST BOWL

I like to batch cook my sweet potatoes in my Instant Pot and reheat them daily. This makes prep much faster.

Always use the ripest bananas you can for maximum sweetness.

Is it OK to eat sweet potato for breakfast? Absolutely! Sweet potatoes are a great way to start the day. Adding a topping like a nut butter will help you stay fuller for longer also!

Is it OK to eat sweet potato daily? Sure thing! It is best to get a variety of vegetables so switch it up every so often, but it is most definitely fine to enjoy sweet potatoes daily.

Is it better to boil or bake sweet potatoes? Either is fine but apparently steaming is actually the healthiest. See below!

What is the healthiest way to cook a sweet potato? For maximum nutrition and flavor, steaming your sweet potatoes is the healthiest method. You can do that in your Instant Pot!

Are sweet potatoes high in sugar? Sweet potatoes are high in carbohydrates and can spike blood sugar levels. However, their fiber content helps to slow down this process. Always check with your doctor if sugar levels are an issue for you.

Ingredients
  

  • 1 small ripe banana
  • 1 small cooked sweet potato
  • 1/2 tsp ground cinnamon
  • toppings – ground flaxseed, chia seeds, nuts, almond butter

Instructions
 

  • Using a fork, mash the ripe banana in a bowl until most of the little lumps are gone. Remove the peel and add the cooked sweet potato and cinnamon and mash again to break up the potato.
  • If your potato was hot, add your toppings and enjoy! If the potato was prepped in advance and was cool add the mixture to a small saucepan over medium-low heat and stir until it reaches your desired temperature.

    I have such a weird relationship with sweet potatoes. I LOVE them, and yet I find it hard to think of things to do with them. Consequently, I find I generally eat them in meals made by other people, or at restaurants. But I think I can definitely get on board with the whole heart breakfast idea!
