Ingredients
- pecan halves – Try to use the freshest pecans possible. Fresh pecans have a more pronounced and natural nutty flavor.

- coconut sugar – I discovered through using this product that coconut sugar has a rich caramel flavor and is less refined than other granulated sugar. You could also substitute maple syrup or honey.
- sea salt – A sprinkle of salt ties everything together. It is a must!
- cinnamon – Gives these roasted nuts a warm and cozy vibe.
- cayenne pepper – This is optional if you are sensitive to spice – or you plan to gift them to someone with a low-spice tolerance. We love the nice kick that the cayenne gives this glaze.
Equipment
- mixing bowl + whisk – For preparing the glaze.
- baking sheet – We use a large-rimmed baking pan.
- parchment paper – This is a must for easy cleanup! We recommend using unbleached parchment paper.
Instructions

Step 1
First, start by preheating your oven and lining the baking sheet with parchment paper. Set it aside for now.
Step 2
Next, in a medium mixing bowl, whisk the egg white until it is frothy.
Then whisk in the water and vanilla.
Step 3
Next, stir in the coconut sugar, sea salt and cinnamon.
Mix the egg mixture until it is smooth.
Step 4
Then, pour in the pecans.
Stir until they are fully coated with the glaze mixture.
Step 5
Next, pour the pecan mixture onto the prepared baking sheet and spread them out evenly.
Try to leave a little space between the nuts and not overcrowd them for even roasting.
Step 6
Then, pop the pan into the preheated oven for one hour, stirring well every fifteen minutes to make sure nothing is burning and then the pecans are roasting evenly.
Step 7
Finally, take the sheet out of the oven and stir well once again.
Allow them to cool for ten minutes in the pan.

Stale or old pecans may not roast as evenly or taste as good.

Texas Glazed Pecans Recipe
