Chipotle Chicken Salad

by Sharon on July 15, 2018

This spicy Chipotle Chicken Salad features chili lime chicken, black beans, avocado and a spicy, fresh and creamy Greek yogurt based chipotle dressing. This easy to make, gluten free salad makes a clean eating lifestyle a delicious one!

Chipotle Chicken Salad

I don’t think I’ve been shy about my love of spicy foods. Fiery recipes are all over this website!

I find it the best way to season food without adding a bunch of chemicals or sugars.

This recipe incorporates my very favourite spice: chipotle.

Chipotle is a smoked jalapeno pepper. Smokiness helps to even out the spiciness of the jalapeno and I . love . it.

In this salad recipe the chipotle spice is complimented by Greek yogurt which adds a rich and creamy texture and cilantro that brings the clean and fresh element. Yum!

How to make Chipotle Chicken Salad

In a small bowl gather your yogurt, chopped chipotle pepper, fresh chopped cilantro, lime juice, chili powder and cumin.

A white mixing bowl with Greek yogurt, herbs and spices.

Give it all a good stir.

In a large salad bowl add in a head of romaine, sliced red onion, avocado and chicken breast. I used my chili lime marinade which worked perfectly with this recipe.

Add in some black beans and top with the dressing.

Toss it well and boom! Dinner is served.

With each forkful, flavour abounds.

This salad hits all the marks. Creamy yogurt and avocado, spicy chili powder and chipotle, protein packed chicken and beans. We have a winner folks. 🙂

A great warm weather meal.

*Side note – I updated this recipe from June 3, 2014 with new photos. Sadly our sweet Louis has passed away but I’m leaving this story and the photos as memorial. We still miss the little guy.

I’d also like to give my warmest birthday wishes to our boy, Louis. Today he turned 10 years old and I almost can’t believe it. We adopted him from the animal shelter when he was 7 months old and he’s been a true blessing and joy in our lives.

His favourite things are sleeping on his dad’s flannel shirt…

…and the heating pad. 🙂

His least favourite thing is when Joe is in the bathroom with the door closed.

That’s true panic, folks!

My favourite things are when he curls himself into a tiny ball…

…and when just a hint of his pink tongue is sticking out:)

I'm feeling a kinship with you--whole meal salads and chipotle are my summer favourites too! The spicier the better :) This salad would satisfy anyone, and leftovers would be great for lunch the following day.
