Don’t you just love easy recipes that take no time to prepare yet taste delicious? Me, too! Here’s a great one for you that fits the bill on a busy weeknight, when you are short on time or a lazy weekend, when you just don’t feel like putting in a big effort for dinner.
I used my Homemade Smokey BBQ sauce as the inspiration for this quick and simple meal by using it as a base on my toast. Speaking of the toast part of this dish, I recommend using a sprouted grain product. I’m not a huge fan of the sugar (disguised as fructose, glucose or corn syrup on the label) that they add to breads. The benefit of sprouted grain breads like Ezekiel is the way it’s digested in the body. Sprouting breaks starches down into simple sugars so they easily digest. Ezekiel breads are also 100% non GMO. I find they are a bit on the pricier side but, since they are stored in the freezer you won’t lose a single slice to mold or staleness. It’s my mission in life to get my white bread loving fella to jump on board with this. It’s taking a little longer than I hoped … but hey, he did love this Chicken Fried Brown Rice so, baby steps it is 😉
Apples are coming into season, now that we’ve hit Autumn, known as the Time of the Harvest. I’m really going to make a consious effort this Fall to focus on eating what’s available locally and eating in season.
The tartness of the apple adds a nice punch to this meal.
Assemble your pizza toast by layering the toasted bread with: BBQ sauce, cooked chicken (for extra smokiness, marinate in BBQ sauce first), thinly sliced apples & red onions. Then finish it off with a sprinkle of marble cheese.
Put it all under the broiler for 2-3 minutes, until the cheese is bubbling and mostly melted.
Cut in half and eat, very properly with a knife and fork 🙂
Simple meal, made fancy! Maybe break out a nice glass and the ‘good china’.
This was quick and easy, guilt free comfort food. I paired it up with a simple salad with balsamic dressing and felt completely satisfied. I hope you treat yourself to this one!
- 2 pieces toasted bread I used Ezekiel Sprouted Grain bread
- 2 tbsp BBQ sauce I used my Homemade Smokey BBQ sauce
- 1 chicken breast cooked & sliced
- ½ apple thinly sliced
- ¼ red onion thinly sliced
- ½ cup marble cheese shredded
- Layer the toasted bread with the BBQ sauce, chicken, apple, onion & cheese
- Broil for 2-3 minutes, until the cheese is bubbly and slightly browned
